sometimes you just need a super simple dinner and luckily, I have one for you today. stephen and I rely on simple dinners during the week that are a combination of foods we likely already have around the house. red onions, vegan sausage, potatoes, broccoli, rice, cheese, green onions, pasta sauce, tortillas… we are pretty much guaranteed to have these items in stock at all times. that, and boxed macaroni and cheese, but that is a story for another time.
I happened to have some peppers that needed to be used and we wanted to celebrate the fact that stephen’s deadline to pass the CPA came and went, since he passed over 6 months ago. margaritas and quesadillas, it was! I love getting creative with this field roast vegan sausage. toss it in the food processor, and your options are endless. these spicy cheesy veggie quesadillas were a hit!
-shredded mexican cheese
-field roast sausage, or sausage of your choice
-butter, for cooking
1. slice your sausage links into small chunks and pulse in the food processor until you have ground sausage.
2. heat up your skillet and butter your tortillas. lay one tortilla down, top with cheese, sausage, peppers, and more cheese.
3. top with another tortilla, butter side up. the more cheese you add, the more sticky the quesadilla will be (less messy as it won’t come apart).
4. complete the above process until you have used all your sausage. slice each quesadilla into quarters and serve with accompaniments such as guacamole, ranch dressing, salsa.
